I’ve mixed my easy cast 1:1 as it should be. I have a kitchen scale, and have made sure it’s all the same weight.

24hrs later, my stuff is done but the backs of my pieces are a little sticky, and put fingerprints in it. The resin feels hard, and has NO wet/mooshy spots.

Should I just let my stuff sit for a little more before doing anything?

Letting it sit for another couple of days won’t hurt, but I don’t think it will help. It sounds like it wasn’t mixed well enough. You can coat the back with another layer of resin to cover the stickiness.
